Chocolate Chip Cookies


Ok, now I know that this is one of the simplest recipes to make... but it is also one of the basics when it comes to baking and in order to be a good baker, you need to have a strong base (like a good buttercream icing or pound cake). I believe that everyone should know how to make a really good chocolate chip cookie... from scratch. A good chocolate chip cookie is like the little black dress of baking...you can take it (as opposed to wear it) anywhere, seriously. This one has been tried and tested ten times over and I feel like I can say with confidence that it is one of the best chocolate chip cookies that I've ever had... just ask my husband and his friends... and his office... :) Even the batter is delicious!




recipe from Ghiradelli Chocolate, yields about 4 dozen cookies

Ingredients:
2 1/4 cups unsifted flour
1 tsp baking soda
1/2 teaspoon salt (I use sea salt)
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup brown sugar
2 teaspoons vanilla
2 eggs
2 cups milk chocolate chips (I use Ghiradelli)
1 cup chopped walnuts or pecans (optional... I typically don't use them)

Directions:
Preheat oven to 375 degrees. Combne flour, baking soda, and salt in a small bowl and set aside. Mix together butter, sugar, and brown sugar until creamy. Then add the vanilla and the eggs, one at a time, and stir until mixed well.

Gradually add the dry ingredients to the wet until combined. Stir in the chocolate chips and drop by tablespoon onto ungreased cookie sheets. Bake for 9 to 11 minutes or until golden brown (I bake mine for 8 minutes, sometimes only slightly longer).
